            Detailed description
Vineyards
The Valencia Protected Place Name is set near the Mediterranean coast at the East of the country, at a height between 250 and 1,000 metres. Climate is warm and the influence of the Mediterranean Sea is very prevalent. Vines have been cultivated in chalky-clay soils for many centuries which combined with a constant presence of an intense sun have given place to fruity wines with a very good structure and moderated tannins.
Making
We choose the best small grain Moscatel grapes. Maceration takes place at 14 ºC and selected yeast is used for fementation. A second fermentation happens in an isobaric tank in order to apply a technique named Charmat-Corto. It happens at a temperature of 16ºC up to get a pressure of 2.5 bars. A tangential isobaric system filters the wine and bottles it with a remaining natural sugar of the same fresh must Moscatel.
Tasting
Brilliant yellow-coloured white wine with green shades.
Very fruity aroma, with memories to white fruit like pear and apple. Mediterranean citric fruit tones. |
In mouth is refreshing, tasteful and young. Gas appears as it was cream, remembering fruity aromas combined with a slight sweety taste but fresh at the same time.
This wine is ideal as an aperitif even to pair all kind of fish, seafood and paella.
