Did you know that...

For Hacienda La Pajarera to make wine doesn’t consist in a magic formula, rather it is to adapt to varieties, to the cycle of ripeness of the grape, to the method of making and to a vintage well harmonized with the aim of getting the personal character that transmits the environment of our land.

It is fundamental for Hacienda La Pajarera that the vine has a balance in its vegetation, the production has a low performance and the grape can ripe slowly in order to get better fruits, just this way it is possible to obtain the best quality wines.

“We harvest manually in 10 - 12 kg crates. This way we achieve the grape arrives at the winery in its optimal for its later winemaking”.

All these ingredients are combined in every harvest with the invariant aim of getting the maximum quality and expression.

Vineyard is 60 years old.

Winemaking and Vintage

Cold pre-fermentation and maceration. Alcoholic fermentation, soaking takes place in stainless steal tanks between 15 and 20 days under controlled temperature. Devatting and pressing in pneumatic press. Malolactic fermentation and decanting in barrel.

Four months in French oak barrel.


Cherry red wine with violet hues of a medium-high layer. In nose red and black fruit is appreciated, raspberries with a greedy background. Spicy, liquorice and toasted notes are also found and remember it passage through the barrel.

In mouth is shows a pleasant entrance with a soft astringency and a good acidity. Red and black fruit, spices and light roast. Fresh and persistent.


Ideal red wine to accompany meat and grilled vegetables, rice, not very cured cheese, sausages and small game.
