Detailed description

Making and Ageing

2015 has been the warmest year since there are oficial records in our region. As a consequence of that the main components of must (sugar, acidity and pH) evolved at high speed and obliged us to an early harvest. Especially in this campaign, the decision of the harvest date of the Cabernet Sauvignon has been key to ensure the quality and typicity of the wine.

The Cabernet Sauvignon was harvested the 26th of August. Extraction of the must took place through a soft and fast direct crushing of the entire bunches in order to obtain the characteristic colour of the wine. Fermentation of the must was slow and lasted 27 days at a temperature of 19ºC. Afterwards the wine was kept in contact with its lees during three more months.

Tasting

Rose-Salmon colour rosé wine with steely glares.

In nose its intensity is highly aromatic where white fruit notes, boxwood and floral notes prevail.

In mouth is an alive wine,unctuous and with a fresh entrance.  

Pairing

Dehesa de Luna Rosé is perfect wine pair dry or risotto rice, lasagna, any kind of mushroom and seafood.
