Detailed description

Making and Ageing

Grapes are harvested in an aromatic window of fresh fruit. Fermentation and maceration take place for four days in order to extract all the colour and anthocyanins. Bleeding and continuity of the fermentation without husks at a soft temperature of 24 ºC.

Ageing in used barrels of American and French oak for four months.


Intense nose. Very fresh, fruity and thiol aromas (leaves of tomatoes, cassis, passion fruit, lime). Very high intensity of fruit. Goog integration of the wood which provides complexity and switness both in mouth and nose. Soft and juicy with a high aromatic persitence.

Red Pirineos answers to the blend of two varieties : Merlot and Syrah.

Pirineos winery has identified a new unmpublished profile which is shown in a natural way at the Somontano. These wines are distinguised by a good concentration, a lot of colour and a softness in mouth but above all by an intense aromatic expression which is characterized by aromas of boj, passion fruit, cassis, citrics and fresh fruit in general (aromas which come from thiol compounds and which are very appreciated in wines nowadays). This kind of aromas come from certain aromatic precursors which are produced inside the grape during the maceration and in accordance with environmental conditions and cultivation and that later are released during the fermentation. These wines are highly aromatic in mouth since saliva frees precursors of these aromas still presents in the wine which makes them to have a high aromatic persistence.

It's a breakthrough given its originality since for this variety this specific profile has not been documented at no other wine region of Spain and the rest of the world.

The Syrah variety harvested on fresh fruit complements the wine aromaticaly with its black fruits notes, violets and plums, getting this way a great set of freshness and aromatic diversity.
